Organic Agave Syrup is an all-natural sweetener extracted from the core of the Agave plant. Using a gentle enzymatic process which converts polyfructose into a simple fructose syrup. Agave Syrup is non-crystallizing making it a perfect sweetener for beverages, fresh-fruit, cereals and sauces.

Acting as a humectant, Agave Syrup locks in moisture to enhance texture and extend shelf life in baked goods. Certified Organic by Quality Assurance International.

Available in both natural and alkalized (Dutch process), we offer two fat levels of Cocoa Powder — 10 and 20%. More soluble and darker in colour, Alkalized Coca Powder is more robust in taste and has a neutral to alkaline pH.

Low fat Cocoa Powder is 10 to 12% cocoa butter and appropriate for baked goods, beverages (dairy and soy-based) and ice-cream.

High fat Cocoa Powder is 20 to 22% cocoa butter, richer in flavor and best-suited to premium product applications.

Cocoa Nibs are made by both roasting and breaking the cocoa beans. Once cleaned and calibrated the Cocoa Nibs can be used as a crunchy ingredient in baking processes and other food applications.


Cocoa Liquor is comprised of 51-53% cocoa butter and 47-49% solids and made by finely grinding roasted cocoa beans until they are a smooth, liquid state. Once cooled, it can be used in various forms including blocks and wafers.


A cream-coloured natural by-product of cocoa liquor, Cocoa Butter is marketable in both natural and deodorized versions. With multiple applications, Cocoa Butter can be used in food manufacturing as well as the cosmetics and body care industries.


A variety of cocoa-solid content couvertures for coating bars, cookies and finished chocolates, we are able to source full containers of single origin organic cocoa beans by special order.

Sweet Tree Sustainable Sweeteners’ 100% Certified Organic Coconut Palm nectar is nature’s perfect sweetener. Palm sugar is a nutrient-rich, low-glycemic sweetener that looks, dissolves, and melts almost exactly like sugar, but it is completely natural and unrefined. It is acquired from the flowers of Indonesian coconut trees by farmers who scale the trees to collect the liquid flower nectar. This nectar is then air-dried to form a crystalline sugar that is brown in color and naturally rich in vitamins and minerals. We are the exclusive distributor of Organic Coconut Palm Sugar and Nectar in Canada.


Coconut palm sugar, unlike other sweeteners, is unrefined and unbleached which allows it to retain all of its original nutrients. Palm sugar is rich in Potassium, Magnesium, Zinc, and Iron and is a natural source of vitamins B1, B2, B3, B6, and C. With a glycemic index (GI) of 35, palm sugar is a low glycemic index food and is considered healthier than traditional white and brown sugar. By comparison, most commercial agaves are GI-42, honeys are GI-55 and cane sugars are GI-68.

The major component of organic coconut sugar is sucrose (70-79%) followed by glucose and fructose (3-9% each). This is in contrast to agave syrup which primarily consists of fructose, similar to high fructose corn syrup (HFCS).


The Food and Agriculture Organization (FAO) of the World Bank has reported that coconut palm sweetener is the single most sustainable sweetener in the world!

This is due in part to the fact that tropical palms are an ecologically beneficial tree crop that grows in diverse, wildlife supportive, agro-ecosystems that require very little water to survive and even restore damaged soils. Coconut palms produce an average of 50-75% more sugar per acre than sugar cane and use less than 1/5th the soil nutrients and water for that production.


The production of organic coconut sugar has the single highest potential for providing farmers with a better life while creating a net benefit to their surrounding environment.


Coconut palm sugar tastes similar to a light brown sugar, but without the metallic finish that is typical in a cane sugar. It has wonderful notes of light butterscotch and caramel with a round, smooth flavour curve.

Flavor-neutral, with no trans-fatty acids and produced without hydrogenation, Palm Shortening is a versatile ingredient well-suited for organic food processing. Solid at room temperature, it can be used as a creaming agent for various food spreads. Tapioca syrups are clean, neutral-flavored syrups that contribute sweetness and functional attributes in a wide variety of food and beverage applications. They are available in a range of sugar profiles from DE 27 to 95, including varying maltose levels. Depending on the application, tapioca syrups can reveal a rich flavour or be a colour and flavor neutral base for confection and beverage developers. These syrups have high solubility and can provide immediate energy, long term energy as well as a balanced energy release through the distribution of simple and complex carbohydrates. Derived from pure tapioca starch, our syrups are hypoallergenic, non-GMO and certified kosher.

Applications include bars, beverages, confections and frozen desserts.

Maltodextrins are produced from organic tapioca starch by a natural enzymatic process. They are used as a fat replacement in desserts, cheese products, ice cream, baby foods, dressings and sauces. Maltodextrins DE 10 and DE 16 are used as bulking agents, in dry seasonings, and as a flavor carrier in spray dry applications. Benefits include: a neutral flavor, which makes it an excellent flavor release agent; a smooth texture; the ability to gel in cold water; a high water binding capability; and good freeze/thaw stability. The whiteness of the powder and the low application rate of 2% to 10% make it a good substitute for fat, milk, gums, and other stabilizers.


A mid DE product (DE29), syrup solids are commonly used in confections, snacks, syrups, sauces, baked goods, and frozen desserts. Syrup solids are stable in baking applications and are beneficial in frozen applications where freeze/thaw stability is required. Used for bulking solids and adding a moderate sweetness level.


The starch is a thickener and stabilizer often used in fruit pies, soups, puddings, breads, sauces, soy, and meat products. It can withstand long cooking times without breaking down. Products made with tapioca do not lose their quality when frozen or reheated because tapioca retains its thickening capabilities throughout these processes. Tapioca becomes clear and gel-like when cooked and dissolves completely when used as a thickener.


These instant tapioca granules are pre-cooked to speed processing preparation time. Mainly used in creamy puddings, they are also ideal for thickening soups, pie fillings, and gravies in sweet or savory preparations.


The classic tapioca pearls you grew up with in tapioca pudding are now available certified organic and kosher. The neutral flavor permits a great variety of applications in delicately flavored recipes.
